Just one more day!

I am starting to go stir crazy, I am so tired of work and I really need a break. This picture is representative of how I feel/look lately.

Thank goodness I am brilliant and booked Monday and Tuesday off (this in addition to having Canada off means that I will be off of work for a full 5 glorious days). However, I am not planning on just sitting around and looking cute, I have big plans for this weekend...here is a breakdown.

Camping!!!

Sorry it has been so long since I have posted, work and life were crazy this week and then this weekend I went camping!!! I love camping, however my version of camping is sleeping in a tent next to my parents trailer so I have access to a bathroom and running water, the BF has informed me that this is not camping, and I should be calling it relaxing instead...fair enough.

Either way it was an amazing weekend filled with Jager, some giggles, cute puppies and amazing people :) Here is a picture of my puppy Tasha and my BF's puppy Charlie on route to the lake...note how much room Tasha has! (So cute)

So the BF and I took Charlie into town to get groceries, and on the way back to the lake we noticed a poor little puppy walking on the side of the highway. Being the amazing and loving people that we are we chose to stop and rescue this little bean, she didnt have any tags so we took her to the Brooks Animal Protection Society! I sure hope her people claim her because she was a very sweet girl and we are sure that she is pregnant.

Friday is Canada day, and Charlie wanted me to post this cute picture of her being patriotic :)

Hope your weekend was amazing too.

Sweet nothings!

Happy Fathers Day!!!!

For Fathers day I decided that I wanted to make an angel food cake, so I turned to Kinnikinnick and made their gluten free version of it! I have to say I was delighted with how it turned out, it was moist, and bouncy (Does that make sense....it does in my head) and it tasted really good, the only thing the Bf said was that he was sad that there were no colored sprinkles in the cake...as that was how his mama makes it (ha ha cute). My mom requested that I top the cake with "Boiled icing, like Nana always made". So being the smart little pumpkin I am I called my Nana (It's her birthday today!!! Happy Birthday Nana), and asked for the recipe...this would have been brilliant however Nana does not recall making this icing...strange since it's apparently a huge childhood memory for my mom.

Never one to be deterred I pressed on in search of this allusive recipe. You see...my mom doesn't like sweets...ever....and she was practically drooling when she told me about this icing...so being the amazing daughter I am (he he) I knew I had to come through for her. I found this recipe http://zestycook.com/how-to-make-boiled-icing/ and prayed that it was right...

IT WAS!!!! Mama said that it was exactly what she remembered!! It was a pretty nice icing too, light and fluffy, marshmallowey but not to sweet! Here are some pictures of my escapade's today!

Have I mentioned that I love this mixer...makes everything so much easier!! (thanks baby)

Lets start a riot!

I have not even blogged about one of my biggest passions yet...why? Because I couldn't even think about it without wanting to cry. I live in Canada, Canada's national support is Lacrosse, I live in Calgary, Calgary's Lacrosse team is amazing, top of the league this year. Calgary was at risk of loosing it's Lacrosse team, has been since January. Despite this threat looming over the players heads they managed to be top of the league, they showed to every game (despite not being paid for a time) and fought, and smiled and proved to the fans how amazing each and every one of them are. They made it to the finals...and hosted the Championship game, I was so excited but I couldn't be fully happy because in the back of my mind I kept thinking that this could be the last game the team played in Calgary (at that time the rumour was that there were no Calgary buyers but external interest in owning the franchise). When they lost I was devastated...I have seen them loose before, and loose Championship games...before I was able to say "next year", this time I wasn't so sure. So I cried, not a tear or two, but a full on ugly cry in the middle of the Dome..it was embarrassing but I was assured that I was not the only one. At that time all I could do was hope and pray that the Flame's owner Ken King came through...

Today is June 14th, and he has....The Roughnecks are now owned by the Flames!!! This makes me happy because it means we will have a National Lacrosse League in Calgary for years to come. Needless to say I am a very happy girl, I am not able to listen to Metalica's Enter the Sandman without getting tears in my eyes, now all I do is smile. I cannot wait until January when the season starts again...never mind that, I can't wait to buy my season's tickets!!!

All done!!!

My friend's K and D have an amazing son, whom I love very very much. He is a pretty amazing kid and I got to attend his baptism today! It was lovely and I feel honoured that I was invited to attend the celebration! For little W's baptism present I decided that he would receive the first quilt I made ever! (which means it's no where near perfect but pretty darn good if I do say so myself!!

Here are some pictures...

I am pretty happy with how this turned out, and it's very soft with varied textures! Now it's time to start on my next quilt (I wont be able to blog about it here with pictures until I give it to the parents of the babe that I am making it for, as it is a surprise. But I promise...It.Is.Going.To.Be.Epic!

Also for the baptism I made some cupcakes, I recently bought a new gluten free cupcake cookbook and K requested some Pina Colada cupcakes... I loved the cake for these cupcakes (coconut flour, white chocolate chips, coconut and finely chopped dried pineapple), but the icing was just okay...I think next time I would do a coconut butter cream or at the very least reduce the amount of coconut oil in the icing mixture. Either way here are some pictures.

Apparently they were a hit because they were gone quickly (which is always delightful!)

After the BBQ and K and D's, K and I went to the Drumheller Wal-Mart, I love Wal-Mart...mostly because each one has different fabric! However Fabric was not the purchase that brought tears to my eyes... these were!

THESE ARE GLUTEN FREE CHEX....IN CANADA.....CHEX.....IN CANADA....I am so excited about this, I literally teared up (this is normal...food makes me cry all the time). I googled it and found out that Rice Chex and Honey Nut Chex are now in Canada from now on!!!!! Which is amazing news for those with Gluten intolerance/Celiac disease...cause these cereals are delish. (now my BF can share my cereal guilt free!!!!)

This weekend was amazing...I hope that you guys had an amazing one too!

Birthday fun!!

Sorry I haven't blogged in a while, it was my birthday!!!! All the fun an festivities kept me from the computer, however I am back now so you can stop worrying!

I should probably catch you up on my progress on the quilt! The quilt top is done and I am planning tomorrow to make my little quilt sandwich and start quilting! However, accomplishing this was not without complications, I ditzed out at one point and sewed a square that has words on it upside down....I was so sad and defeated because I didn't think I could fix it with out ripping apart the whole quilt...I mentioned it to the bf and he suggested I just remove the 1 square, and sew it back in the right way, at first I thought I couldn't do that but the more I thought about it I realized that he is a genius, and thus my quilt surgery began!

And here is a picture of it all fixed!

Now, onto other things, my bf is sneaky, he tried to trick me into thinking that he didn't get me what I thought he got me for my birthday...in order to do this he sent me this picture.

Which is a super cute picture that I love, however it totally threw me off of what he got me for my birthday (success, he even has a video on his phone of his roommate opening this gift and laughing cause it was a trick).

In the end this is what my super amazing keeper of a boyfriend decided to spoil me with for my birthday.... brace yourself, cause this shit is beautiful!

                                               EEEEEKKKKK don't you love her!!!

Now because he's so amazing I decided to bake him some cupcakes that include bacon, he has been asking for them for awhile and I was itching to use my mixer so we started baking, here is the finished product.

They were pretty good, the cake could have been sweeter but I can fix that next time :) (I used the Kinnikinik's chocolate cake mix, which was very moist and impressive..)

Here is a picture of the bf cleaning up for me after, apparently the icing was good. (Isn't he the cutest?!...umm I mean the sexiest, manliest man around ;) )

I also decided that you guys should see my amazing stove, it's fantastic, even has wood paneling...makes me feel like I am cooking with a station wagon ;)

At least my dish cloths and oven mitts are cute....

                                                                          Thanks all
