Time for a change!

I have decided that enough is enough, it seems like the more blissfully in love with Mike I fall the bigger my butt gets! It's driving me nuts...(Thankfully my darling has gained the love pounds with me). 

So I have decided that it's time for it to end. Last week I walked 5 miles! Yesterday I went for a long walk with monkey and then today I walked 1.7 miles and went on the elliptical for a while! 

In honour of my hard work I decided to make a healthy dinner to round off the day (and make up for the calories that I am drinking with my wine tonight). 

I am in love with avocado, I could eat it daily, and even though it's high in fat it's a good fat, so I figure it doesn't count. 

Tonight I made the following recipe!


Ingredients.

2 eggs
1 Avocado
1 tomato
salt and pepper.

I made an omelet (no milk added just the eggs) and put avocado and tomato into it, salt and peppered generously and had some no-fat sour cream and spicy salsa on the side. DELICIOUS and all this yummyness for under 500 calories! I should also note that I am stuffed, couldn't eat another bite!

mmmmmm food

I love nacho's, but I don't get to have them often because they typically are not safe at restaurants (except the Saddledome...so I will be having those often now). I made some Nacho's at home...look how sad they are! Just cheese and olives, however they were delish.



I know this looks gross but it was a home made guac, I mixed it with chipotle seasoning...sooo delicious.

I haven't had a Spicy Chicken Sandwich since being gluten free, and I LOVED the one at Wendy's. Imagine my delight when I found the recipe (linked above) on Pinterest!! I finally whipped it up for Mike, and I must say it was delish, hot and moist on the inside and nice an crispy/spicy on the outside! So good, I will be making this again fo-sho!

Valentine's decorations and yummy food!

I don't know if y'all know this but I LOVE decorating my office...it makes my work space happy and inviting and I find, that when work is killing me, it makes it a little more bearable. The next "holiday" is Valentines day...and so I have decorated. This is somewhat surprising because I have always thought Valentines day was silly (I even wrote a essay on it in school). HOWEVER, I do enjoy it a little more now...perhaps because I have a reason to celebrate. NOW that's not to say that I don't think that we should do lovely things for those we love all year, in fact I try to make sure that I do nice things for Mike to show him my love on'de'regular, however it is nice to celebrate it officially once a year. Here are some pictures.


 If you notice, between the Valentines decorations is my ACSW registration certificate (*social workers unite*), and autographed pictures of two of the Calgary Roughnecks (thank's baby).

Today my Mama made pork chops for dinner. She was making my dad's with shake and bake, which I can't have so I had to get creative with seasoning. I went through my moms spice drawer (slim pickings batman). I manged to find Lemon pepper, white pepper, garlic powder and ginger powder. I sprinkled those on each side of the chop and my mama baked it for me (in a separate little pan and everything to avoid cross contamination, so freaking sweet). I wash shocked at how good these were, I was even chewing the last little bits off the bone like an animal...so not like me but so delish! I will be making these for Mike asap..

Christmas crafting

I love making homemade gifts, I really feel like they mean more and all the time I put into them represents my love for the giftee. Here are some pictures of some of the homemade Christmas gifts I sent out this year :)

 I made home made bath salts and bath fizzies for the admin girls at work (the ones who weren't allergic or didn't hate bath products that is.

 This is a bookmark that I made for a girl at work, allergic to scents and chocolate...but loves reading...
